Gaetano Lanza started working in the restaurant business very young, when he was still a physics student at the University of Bologna. In almost 25 years of activity he has created and managed numerous activities in the field of catering, he has opened and managed several places in Bologna, he has created brands, organized events and launched projects combining catering, culture and entertainment.


I have been involved in food & beverage since 1998, when I opened the first tavern. I have always been fascinated by this world and its complexity. An intense work that confronts you both with the market and with the individuals who are part of it. These are the places to which I have dedicated myself.

In this work we are always looking for the best way to “make others feel good” while they drink or eat. This is our job! We not only serve drinks or food, but we take care of the mood of our guests, while they choose our place to stay with us: this is my favorite reading. A job lived like this can only be difficult and highly satisfying!


The Ristoo Method is a course for restaurateurs written by a restaurateur and tested in reality directly in our restaurant. This is why the course is full of concrete examples taken from everyday working life.
As an operator I know that to make a restaurant work you need a lot of skills from cooking, to marketing, to accounting, but we believe that first of all we have to “tidy up the house”.
